It's incredibly adorable and sounds very very tasty.

The wings kept breaking? Oh dear! I make gingerbread bats every year (assorted batches starting in October and going through December), and I've not had problems with wings breaking. Are you using cookie cutters, or trying to sculpt the bats out of dough?

I might give it another try this year since I bought a bigger spatula. As tasty as they were I'd prefer my bat cookies over wingless-rat ones. ^_^
