A question: as I'm probably going to start posting more often about food, do people want me to put it behind a Read More tag for ease of scrolling?

I was a little more successful this week at eating fewer (less? augh, grammar escapes me right now) carbs. Well, except for Wednesday when I inexplicably woke up at 6am and spent the day saying "Fuck everything, I'm having all the mac & cheese in the world". But other than that it's been pretty much under 100g total carbs a day, which is a sensible way to go for me.

I'm kinda mad about my joints already feeling slightly better. You see, I HATE diets. I know they don't work for weight loss; any weight lost on a diet will come back plus more once you stop, and they're bad for your metabolism. But I also know that also know that there is no One True Way of Eating for everyone, and sometimes annoying eating plans are worth the frustration for feeling better.

The other tricky thing about this is the Stroppy One. He loves carbs. (Who amongst us doesn't, really?) He hates vegetables. (In part because he's a supertaster, in part because he's allergic to nightshades.) Both of us hate cooking, and are kinda 'eh' at it. This means that while I can come up with easy-ish meal/grazing options for myself, it's harder for him, and he's worse at meal planning than I am. In short, this whole changing how I eat thing has an additional level of difficulty.

There's some good stuff going on, and I'll squee about it later. A hint: I am FINALLY getting the experience that was the present of my 50th birthday. OMG I CANNOT WAIT OMG OMG OMG.

Staying with DOr during her move has meant our diets are ridiculous. We have eaten out more than in because of packing and energy and unpacking and not knowing where things are and lack of energy... And its really taken a toll. We are working on eating fruits and vegetables several times a day though, for the fiber alone if nothing else. Its a start.

Hot hot hot weather makes it so hard to want to cook anything, and that makes the low carb diet super hard since most low carbs require it and so do most proteins. Just ugh. I feel for you.

And of course any sort of diet brings up the Path of Madness as a side effect. Hang in there sweetie. You got this.

It helps if you don't think of it as a diet. Think of it as a lifestyle change. You diet when you're trying to fit into those pants in time for your high school reunion or a wedding. Dieting is temporary. A lifestyle change can be forever.

Oh I am as one with Mr. Stroppy with the carbs (white food!) and nightshades. I laugh ironically at vegans because A. vegetables really do hate me. And B. I'm sensitive to practically every veg. but broccoli (one I love), green beans, carrots, cabbage, and brussels sprouts. So a vegan diet I could eat would be laughably limited.

If you went to see a nutritionist it wouldn't be a diet it would be a meal plan for a healthier you. How I should be eating all the time and if I slip then it will be a return to that proven meal plan.

Same problem in our house if i am eating low carb or calorie what to have on hand for hubby. I might have to go back to bulk meal prep on Sunday so there are leftovers all week for him. Make veggie enchiladas, veggie chili in the crock pot, and something in the hot pot all at once. Add in a healthier take out like Cafe Yumm or Chipotle once a week skipping the rice.

All the best foods are full of carbs and fats ... cheese. Or taste best drenched in butter -like lobster, artichokes- and it's difficult to do without them. I have a few suggestions, with that in mind.

Get a few tubs of whipped butter. You get the same taste of butter & will generally use about half to one-third of what would be a 'normal' pat of butter. This can be used, along with 1% milk for sauces - without much taste change.

Speaking of mac and cheese, by swapping out some cheeses for lower carb - but still quite flavor-full cheeses, you can still enjoy a less-guilty pleasure from time to time.

In general though - good luck & never deprive yourself. Look at it as 'experiments in finding new yummy things'.

Something I've been living on during the pandemic is seitan salad. It requires no cooking skill other that working a knife. It's less... vegetable-y than pure salad. My dressing is sesame oil and vinegar, and I'm freaky enough to put brewer's yeast on it, too, which adds some of the umami that you may miss. Oh, and my son doesn't like raw tomatoes, so I hardly ever have them around.
