As some of you know, I've been changing how I eat, because it turns out that cutting out starches makes a HUGE difference to my pain levels. So, I've been browsing a lot of Paleo/vegan/raw food blogs in search of recipes. If you had told me a month ago that I'd be eating zucchini noodles*, I'd've raised my eyebrows at you.

Anyway, today's lunch recipe turned out so good that I feel compelled to share it with you! Behind the cut, fig avocado "pasta" salad.



  • 1 zucchini, grated or spiralized or however you want to make "noodles" from it.

  • 1/2 avocado

  • 4 figs

  • 1/2 lime

  • Chopped pistachios or pecans

  • Olive oil, salt



Dice the avocado and the figs. Toss in a bowl with 1 - 1 1/2 Tbs. olive oil and the lime juice. Add salt to your own preferences, mix together, and sprinkle with the chopped nuts.
