*It turns out I can have gluten (omg breeaaaaaaad), but corn is an instant issue for me. In fact, I suspect it's a histamine reaction; my throat doesn't swell up and there's no tingling, but about 15 minutes after I eat something with corn, my joints and stomach become swollen and inflamed, and then the vertigo and migraine.

If not, you might be sensitive to...*something* in the GMO process (large chunk of corn products are "Bt corn" or some such) OR they sprayed a pesticide that's affecting you.

At least when you know what to look for you know to look for it, but corn's a really bad one for USian food from what I can see, you have my sympathies
