Ingredients:
2 1/4 cup sifted all purpose flour
1 1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cooking oil
5 egg yolks
3/4 cup water
3 to 4 teaspoons rose water
1 cup egg whites (6 or 7 large eggs)
1/2 teaspoon cream of tartar
Preparation:
Make sure your eggs are at room temperature before you begin. Cold eggs don't fluff as well.
Sift the flour, sugar, baking powder and salt together into a very large mixing bowl. Make a well in the dry ingredients. Add, in order, the oil, egg yolks, water, and 3 to 4 teaspoons rose water, beating with a mixer after each addition until smooth.
Beat the egg whites with the cream of tartar in a large bowl until very stiff peaks form. Fold the beaten egg whites into the batter, folding gently with a large spoon. Spoon batter into paper cupcake cups, about 7/8 full.
Bake in 350F oven for 16 - 20 minutes.
Glaze:
1 cup powdered sugar
3 to 4 tablespoons half and half or light cream
1/4 teaspoon rose water
1 or 2 drops red food coloring
Glaze:
With a wire whip, combine the powder sugar, half and half or light cream and 1/4 teaspoon rose water; beat until smooth and of drizzling consistency. Stir in red food coloring to produce a pleasing shade of pale pink. Slowly pour the glaze over the cake, letting it run down the sides.
