Try really sharp cheddar or other stroppy cheese with quinoa pasta--which is a minomer, since quinoa isn't a grain, it's a flower. The quina does *not* taste like wheat pasta, but if you're really jonesing for mac&cheese it can sub pretty well. Just--minimal, and balance well with veg and protein.
