As some of you know, I've been changing how I eat, because it turns out that cutting out starches makes a HUGE difference to my pain levels. So, I've been browsing a lot of Paleo/vegan/raw food blogs in search of recipes. If you had told me a month ago that I'd be eating zucchini noodles*, I'd've raised my eyebrows at you.
Anyway, today's lunch recipe turned out so good that I feel compelled to share it with you! Behind the cut, fig avocado "pasta" salad.
Dice the avocado and the figs. Toss in a bowl with 1 - 1 1/2 Tbs. olive oil and the lime juice. Add salt to your own preferences, mix together, and sprinkle with the chopped nuts.

*I refuse to call the damn things "zoodles". Just ... no.

- 1/2 avocado
- 4 figs
- 1/2 lime
- Chopped pistachios or pecans
- Olive oil, salt

Here's a recipe I came up with, and it's really easy to make. I eat this whenever I get the salt cravings late at night.
Zucchini soba - not vegetarian, contains fish.
1. Take a small-med zucchini, make it into noodles.
2. Put into a bowl.
3. Take 1/4 cup or so of soba soup broth (can be found at Uwajimaya), and pour into the zucchini.
4. Nuke for a minute or so, covered, to cook the zucchini slightly.
5. Stir.
6. Eat.
